Instructions
  1. Clean, wash and soak the dals and rice separately in enough water for at least 4 to 5 hours. Drain and keep aside.
  2. Blend the dals, rice in a mixer to a smooth mixture.
  3. Transfer the mixture to a bowl, add the curds and mix well. Cover and keep aside to ferment overnight.
  4. After the fermentation the batter will have tiny bubbles
  5. Add the bottle gourd, carrot, spinach, lemon juice,coriander leaves, green chilli and ginger and mix well.
  6. Add chilli powder, turmeric powder, coriander powder, salt and mix again
  7. Add baking soda to the above batter and mix well.
  8. Prepare the tempering by adding mustard seed, sesame seed, asafoetida and curry leave in a hot oil.
  9. Mix the half of the above tempering in the batter.
  10. Transfer the batter to the greased tin and pour the rest tempering on top of the batter.
  11. Bake the batter for 50 mins at 180 degree in pre heated oven.
  12. Handvo is ready to be served with cutney

If you like handvo  even more crispy, cut the handvo cake into medium pieces and stir fry in a pan with some oil. The outer crust will become very crispy and it will taste amazing.
