Vegan Healthy Raggi &Jaggery Chocolate Cup Cake
We call this as a guilt free and pure vegan cup cakes as it contains the goodness of whole wheat, jaggery and millets with awesome taste of chocolate. In the raggi chocolate cup cake, sugar is replaced with jaggery and it tastes the same or even much more better than sugar. Why jaggery?It has many health benefits like it treats flu- like symptoms,purifies blood, boosts immunity, cleans the body , good source of energy and many more. Kids loves thiscup cakes cause this tastes chocolatey and elders can eat guilt free as it doesn't have maida, sugar and butter.

  1. Preheat the oven to 180℃/350°F. Grease the cup cake mould with a litte oil and dust it with whole wheat flour , dust off any excess flour, or put the cup cake paper in the mould.
  2. Melt the jaggery in 1 1/2 cup water in microwave or on gas. Add coffee powder and keep it aside .
  3. Sift the whole wheat flour, raggi flour, chocolate powder,baking soda and salt.
  4. Add oil, vinegar,vanilla essence in jaggery water and mix it.
  5. Add the flour mixture into jaggery water mixture in two batches.gradually fold the mixture with rubber spatula ,until the mixture is evenly blended.leave the mixture for 20 mins to absorbs maximum water.
  6. Pour into the prepared cupcake moulds and bake it for 30 mins ,or until the cupcakes springs back when pressed. Leave it to cool .
Recipe Notes

Always leave the whole wheat cake batter for 20 mins before baking
