Gluten Free Rice Flour Chocolate Cake
One of our friend asked us to make or teach her GLUTEN FREE cake as her son is hyperactive and is not allowed to eat SUGAR,BUTTER and any food that contains gluten as it increases his energy more. I told her that i will try to make the chocolate cake with gluten free flour which we get in the market. Her son also took promise from us that we get him the cake next day. We went to the store to get the gluten free flour but unfortunately the flour was out of stock.Since we promised the boy to get the cake next day ,We thought of trying with some other gluten free flour which is easily available. We had heard of a rice flour cake so we wanted to give a try but with our own twist, SUGAR replaced with JAGGERY and BUTTER replaced with OIL.We also used tapioca(sabudana) flour because it adds a bit of springiness to your baked goods. The next day we gave the cake to the boy to taste. He was so happy and loved the cake. The Smile one the boy's face made our day :).
