Instructions
Tamarind and Jaggery Chutney
  1. Soak Tamarind over night in water in a bowl.
  2. Squeeze the tamarind pulp with your hand in the same bowl.Strain the pulp and keep it aside.
  3. Heat oil in a pan.Add cumin seeds and let them crackle.Add ginger powder,asafoetida,red chilli powder and stir it.
  4. Add the tamarind pulp and cook for 3-4 minutes.
  5. Add jaggery and salt as per your taste let it cook for 4-5 minutes.
  6. The pulp will get thicken .Remove from gas. let it cool and store in air tight container.
Green Chutney
  1. Grind all the ingredients except salt and lemon.
  2. After grinding squeeze lemon and add salt as per you taste.
Dahi Vada
  1. Soak the washed urad daal over night or for 4-5 hours.
  2. Pre heat the oven at 180 degree.
  3. Drain and transfer the urad daal to grinder along with green chillies,chopped ginger, asafoetida.Grind it to smooth batter.
  4. Take the ground batter in a bowl and stir the batter briskly for couple of minutes.This process will make the batter light and fluffy.
  5. Add the raisins, chopped cashew, baking soda along with salt in the batter
  6. Pour the batter in greased muffin tin.
  7. Bake the batter for 25 mins at 180 degree.
  8. Take the vada out from the oven and let it cool for 10 mins.
  9. Im a bowl take hot water , add vada in them and let them soak for 15 mins.
  10. Press each vada between your palm to remove excess water.
  11. Whisk curd and add honey and salt .Pour the mixed curd over vada and to with green and tamarind chutney and sprinkle red chilli powder ,black salt and jeera powder. Ready to serve
Recipe Notes

Vada once baked will be little hard on top , once they are soaked in the water for 15 mins it becomes soft.
